We believe in Hummus

Viviamo nella città che è considerata la “capitale simbolica” delle tre religioni monoteiste. E non crediamo in nessuna delle tre.

Viviamo in un paese in cui al governo andrà un uomo che non crede nella soluzione “due popoli, due stati” e l’ago della bilancia della politica israeliana in questo momento è tale Avigdor Lieberman, noto per le sue posizioni che possono essere definite ultranazionaliste e per una sua certa avversione per la popolazione araba.


La Tzipi Livni, se non sarà accettata la sua proposta di essere capo del governo a rotazione con Netanyahu, sarà all’opposizione.
La sinistra è morta. Questo mi ricorda qualcosa.

Il responsabile delle negoziazioni in Egitto si incazza con Olmert per una sua interferenza nelle negoziazioni, e ribadisce la necessità di non offendere gli egiziani (che sono i broker di una eventuale tregua con Hamas) facendo della liberazione del soldato Gilad Shalit una precondizione per un cessate il fuoco. Olmert lo sospende.

E allora ci rimane solo più l’hummus , quello vero fatto nel mortaio e servito con hamuzzin (=sottaceti) pitot e cipolla cruda per i più coraggiosi.

Da mangiare sotto casa, da Azura, vicino ai banchetti degli Irakim, gli iracheni. Gente che se la incontri in un vicolo la notte francamente ti spaventi, ma poi sono i nostri fornitori di frutta e pane.

Nel ristorante (una stanzetta) è incorniciato un articolo di Petrini apparso su La stampa dove si parla di loro e c’è pure un manifesto di Terra Madre. Al venerdì c’è anche il sofrito, uno di quei piatti tipici della cucina sefardita per lo Shabbat, che cuociono molto a lungo a basse temperature. Un tempo infatti ognuno portava la propria casseruola con il sofrito o altro il venerdì dal fornaio, che spento il forno per shabbat, lo metteva a disposizione delle massaie. Le varie casseruole erano poi recuperate per il pranzo del sabato.

L’humus di Azura è il top, a quanto sembra. Se vogliamo cercare il pelo nell’uomo, il proprietario tiene l’unghia del mignolo francamente troppo lunga: o sei un mandarino cinese o è un No-No.
